Red Wine

add & Soak 3/4 to 1 hour

Black Currant Jam**

Beef or game stock

Shallots

chop & add

ea

Lemon

Squeeze into sauce

Dijon mustard

add

 

 

 

Reduce over a Medium Heat

Swirl in

**If you can't find black currant jam:

Increase currants & wine by 1/3 & add 3 tbl sugar
